Gluten-free Strawberry Rhubarb Pie with Crumb Topping

This recipe was supposed to post while I was away last week, and for some reason it didn’t! My Mom has recently had to make some big changes in her diet, and has had to cut out gluten among other things. It was her birthday at the end of May, and I know that she LOVES rhubarb. Even though I’ve never been crazy about it myself, I decided that since rhubarb season was just starting, the best thing to do would be to bake her a pie that she could still actually eat given all of her new dietary restrictions! That’s where this recipe comes in (one that I actually ended up really liking myself, go figure!) – it’s tart, sweet, nutty, cinnamon-y and crunchy …

Sea Salt Dark Chocolate Brownies with Peanut Butter Buttercream ♥

It looks like summer has finally come to our little town, and you know what that means…BBQ! I love to have people over, and we often go over to celebrate with friends and family when the weather gets warm, and I am sure that the same is true for you. With that always comes the need to ‘bring something’ to contribute to the party! As you might imagine, dessert often falls on me, which I don’t really mind. I have a few go-to recipes, and I love baking pies with fresh fruit when it comes in season, but a few weekends ago I had a real craving for the combination of chocolate and peanut butter. Well, along came this recipe. I thought, what could make …

Toasted Almond Banana Bread ♥

I’m baaaaaaaack! Seriously. I hadn’t even realized that it’s been THIS long. When our big event starts looming in the horizon, it’s hard to keep up with other things. But, I’m back and am very excited to continue sharing recipes for the foreseeable future. I don’t want to blather on any longer, so let’s talk about the recipe. Moist? Check. Banana-y? Check. Just the right amount of toasty almond goodness? Oh yes, check check check. This recipe makes two standard-sized loaves, and once you try it, you’ll see why it makes sense to bake two. It is just that good! I actually got in trouble from my husband because I was going to pack up some of ours to bring to a friend’s. I had …

Gluten-free Avena (Old Fashioned Mexican Oatmeal) ♥

A few weeks ago my husband sent me away to Mexico for a vacation…alone. I have to admit that I was super nervous to be that weirdo who was at an Adults-only resort alone, but I had a fantastic time. I made some new friends, had a lot of fun taking part in sports and activities and of course ate my face off. While I was there I was reminded of my last trip to the Riviera Maya a few years back with my sister. There was one breakfast item that I literally ate every single day and when I went home I told myself I was going to make it… and then completely forgot. For four years. So this time when the resort I …

Cacao Roasted Almonds (Gluten-free, Paleo) ♥

If you’re like me then you’ve probably entered 2016 with some intentions to be a little bit healthier. Well then, allow me to help you enjoy a snack that is good AND good for you. I’m not going to lie to you and say that these are better than a Snickers bar or something…but they are a nice healthy little snack that even my toddler approves of. Plus, they’re insanely fast and easy to make, which is always a plus as many healthy treats can take some time to prepare. Whip a batch up for those moments when your willpower starts to dribble away…so like, yesterday.   Cacao Roasted Almonds Makes 2 cups of Almonds   Ingredients: – 2 cups whole raw almonds – 2 …

Flourless Peanut Butter Cookies ♥

Anyone else feel like they’re going to explode after eating way too much over the holidays? I even had salmonella for quite a bit of it and I still feel like I overindulged. I guess that’s the usual story of the season though, isn’t it? I won’t preface this recipe by saying it’s ‘healthy’ as it has a little bit too much sugar for my liking, but I tried to add other good quality ingredients to balance things out. If you’re looking for an easy peanut butter cookie that everyone will love, with some little tweaks to make them even better, then you’ve found the right recipe. These have just the perfect amount of peanut butter taste and can be taken to a whole ‘nother level with …

Chocolate Mint Chip Cookies ♥

I feel like I have to preface this post by saying that it’s never too early for a holiday recipe. It’s almost December, right? We all have to get our holiday baking lined up early…right? Well, wherever you are in your own Christmas preparations, I’m in full on holiday mode already. My husband just booked me a week away (by myself) in December so I feel like I have to get my ducks in order as I will miss a full week of getting ready for Christmas. I’m so excited I already wrapped about 15 gifts today just so I don’t have to be stressed out when I get home. The holidays are probably the best time of year, but also the most stressful… at least …

Apple Cinnamon Muffins ♥

There’s just something about the crisp fall air right after Halloween that makes me want to cook and bake absolutely everything with apples. It probably doesn’t hurt that there is an abundance of my favourite apples, Honeycrisp, this time of year as well. These muffins are super easy and would make a delicious treat for any time of the day. They’d probably make a fantastic breakfast as well! My daughter and I have enjoyed working apples into all of our usual breakfast favourites – apple pancakes, apple waffles and of course these muffins have all graced our breakfast table as of late. If you’re looking for the perfect, portable bite of cinnamon-y fall goodness look no further 😉   Apple Cinnamon Muffins Makes 12 muffins …

Gluten-free Pumpkin Spice Donuts ♥

It’s that time of year again… And as much as I hate to see summer making it’s last stand, I truly do love fall. I’m not much of a coffee person so I’m not going crazy over Starbucks, but I am definitely a fan of boot and sweater weather. These donuts are full of that pumpkin and spice flavour, and they’re baked so they’re nice and fluffy, almost like little donut-shaped cakes. My daughter can’t seem to get enough of them, she even asked for one at breakfast which I obliged because they’re really not a bad “treat.” If you’re in the mood for something pumpkin spice-y but also keeping an eye on the kinds of things that you put into your body this just …

Dark Chocolate Avocado Pudding ♥

So…I’ve made another drastic overhaul to my diet. I was really cutting down my sugar intake, but now I’ve cut it out altogether (the refined, the white, the brown, the coconut, and all of that)…and I have to say I’ve been feeling pretty great. My energy level is up, I feel like I’m sleeping better and I have a lot less of those old lady aches and pains popping up. It poses an interesting challenge for me as a baker though. I know I will still prepare traditional items for customers, but now I also have to post some recipes that I can actually eat, haha. I’ve seen a ton of recipes online (and especially Pinterest) for pudding made with avocados. I’ve also heard horror …
